Candy!

For the last couple of weeks my candy consumption has exceeded the norm (which is none).

The background: A man friend knew I was having a rough time and went to buy me Easter candy as a pick-me-up. He knows that I like to eat wholesome foods, so his generosity was accompanied with the following, completely sincere explanation: “It’s organic candy, so it’s healthy!

How could I refuse?

Stuff I’m eating

Hi friends!

How was your weekend? We had some nice weather hit the city, which was surreal, inspiring, and probably good for my soul in ways that I have not yet recognized. Seeing the sun shine through my windows and getting out in the fresh air totally made up for that lost hour of sleep. I must admit that my sleep has been less than awesome lately, but I’m kind of over trying to make that work at this point. I do my best, and it is what it is. Feel free to bitch about your sleep problems below. I know I’m not alone.

So I’ve been eating stuff, and I feel like sharing. These are the food trends of February/early March:

~

1. Salads inspired by this one:

@ Jason’s Deli in College Park, Maryland last month. I haven’t eaten salads on the regular since last summer, but I have been going hard on this fruit/nut combo ever since. Key ingredients are greens [I am partial to baby spinach OR Trader Joe's Organic Power Greens mix (baby kale/baby chard/baby spinach mix - amazing)], apples, raisins, almonds, pecans, and balsamic dressing.

One time I omitted the pecans and added garbanzo beans. Still good.

2. More greens.

There has been a definitive resurgence of vegetable servings in my diet over the last 6 weeks, which feels just as natural as the lack of vegetables did through the months of December and January. It makes me feel like my body is smart and in tune with eating more seasonally, and I like that.

I like to saute my greens in shoyu and a teeny bit of Bragg’s, in case you were interested.

3. Butternut squash fries.

The size of the squashes at the Co-op are cray-zee. I get three plates like this out of one squash:

4. I am still killing the cereal. Boxes last 3 days, tops. Who gets tired of cereal? I never!

5. Anddd…this:

Trader Joe’s roasted vegetable pizza. My favorite easy dinner (plus you get leftovers for lunch the next day).

Foods of October!

I’m posting on a Friday – what?!

Pittsburgh is still recovering from Hurricane Sandy, but things are starting to dry up. I’m thankful we didn’t get hit as hard as many places, and my heart goes out to those who were badly affected.

I can’t believe it is November – can you? Thanksgiving in a few weeks and then Christmas! I’m simultaneously dreading the craziness of these next 8 weeks and wishing it could last longer.

Now that October is officially gone, I thought I would share some of the foods I’ve enjoyed this month. Food photography has been limited, but I do have some things to show you!

1. Apples. I bought a bushel of Ida Red’s from Soergel’s at the beginning of the month, stuck them in the fridge, and I finished my last one two days ago. I need to restock!

2. Spaghetti. I love the whole wheat pasta from Bionaturae. It is so tender! I like to eat it with a semi-homemade sauce: sauteed onions and garlic with jarred tomato sauce, plus vegetables or protein that I may have on hand.

3. Roast beef. I made my first roast beef earlier this week when Sandy was gearing up. I roasted 1 pound of grass-fed sirloin for 55 minutes at 325 degrees. I didn’t have a meat thermometer, but it came out pretty well and I got three meals out of it! I also ate broccoli for the first time in like, 2 months. I’d been feeling a bit guilty about my lack of greens…lately I have been more inclined to shop for groceries that won’t go bad so quickly.

Aforementioned broccoli – 1 whole crown! I was so pleased with myself and I feel inclined to brag about it here.
