After two doctors appointments yesterday, my head is a kitchen sink of sudsy dishes. But one thing always helps.
I’ve said it before, but early mornings are one of my favorite times.
Journalling + pre-breakfast + no distractions = a much clearer head.
Coffee and apple slices.
Therefore this post will be short and sweet because the above picture is calling my name.
But three things before I go!
1. Thank you for sharing your thoughts on Christmas music! We all have an opinion on it and I love that. Not everyone loves it, not everyone hates it, but that’s how it should be. All through high school I didn’t care for holiday tunes. It was only after I got to college and began living away from how that those songs began to hold a certain amount of nostalgia for me. Tastes do change, I guess!

2. Butternut squash was redeemed in yesterday’s lunch. I think I had a bad one before. Either that, or it just need to be cooked as fries. Everything’s better in fry form, right?

My opinion of the butternut squash was redeemed when I made it for Thanksgiving – it was my favorite part (almost)! I agree – I think roasting it in cubes/fries is much better than how I was baking it in a pie plate with water

Journaling BEFORE the day starts is such a good idea. I always tell myself I’ll do it as I’m going to bed, but that never happens. I’ll try this!

You have gotta try butternut squash raw! its so yummy. Mark Bittman gave me the idea. I have a recipe on my blog (I think I did it last week, but its no updated in my recipe tab yet). To be honest tho, its not my favorite squash. I like delicata and kabocha as my squashes of choice.

Butternut isn’t my #1 choice either. I love buttercup and delicata, but the farmer’s market has stopped selling them so I think they may be out of season here.
Fry form is definitely the best way to eat bnut squash. Definitely.
OK, tell me… how do you find a butternut squash you can cut into. I tried to make it the other day and pretty much gave up trying to cut it!

Fry form for the win! I always “fry” at least half of my bnut squashies. And then eat them with ketchup. Oh yum.
