Yesterday I started things off with coffee and this:
Apple and peanut butter.
Then I gave myself a little challenge! With the pain in my legs, I’ve been afraid to go for a walk outside for the last few months.I guess my biggest fear was that I would get away from my house, my legs would crap out, and then I wouldn’t be able to get home. But given my recent successes in physical therapy, I decided to give it a try yesterday. Nothing too crazy, just a ten minute jaunt around the block.
Well guess what? I did it!
It feels good to know that I was able to not let my fear hold me back. Yes, it was uncomfortable. Yes, I had to ice down my legs when I got home. But I did it anyways. And crunchy autumn leaves under my feet made me such a happy girl.
I rewarded myself with the rest of Sunday’s pancakes.
Whole wheat pumpkin pancakes topped with Julie’s peanut flour paste and banana slices.
Other nibbles from yesterday…
Refried beans with a whole-wheat spelt tortilla.
Roasted delicata squash with almond butter.
Broiled tempeh with pumpkin and almond butter.
FYI: It’s perfectly acceptable to have roasted squash as a snack.
ALSO, today’s jam is perfect for “kicking through the autumn leaves”. So do it!

Congratulations on your walking success, girlie! I am so glad that you can enjoy the beauty of fall outside, even if only for a little while. Every step you take counts and I’m sure you’ll be in tip top shape in no time.
I totally agree with you that roasted squash is a perfectly acceptable snack. Quite honestly, I would eat roasted squash for every meal if I could. However, my orange (or “free fake-tanned” as I affectionately call it) skin would have it otherwise. Did you season your tempeh at all before you broiled it? I have some tempeh in the fridge that I want to use and your idea sounds great! Squash and almond butter with tempeh is right up my alley
… and really any excuse to eat squash, hehe.
