Whole Wheat Pancakes

Here’s a great basic recipe for whole wheat pancakes. It has a simple ingredients list that is easy to adapt and add to. For example, you could easily make these 100% vegan by subbing the eggs for flax and the honey for agave, or you could add pumpkin, bananas, or berries give them some fruit and veggie lovin’.

Whole Wheat Pancakes (makes 9 medium or 6 large pancakes ~ 2 servings)

  • 3/4 cup whole wheat flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 tbsp coconut oil
  • 1 egg
  • 3/4 cup almond milk
  • 1/2 tsp vanilla
  • optional: cinnamon, nutmeg, sweeteners
  1. Whisk together the dry ingredients in a medium bowl.
  2. In a seperate bowl, beat together the oil, egg, milk, and vanilla.
  3. Stir or whisk the wet ingredients into the dry ingredients until just combined.
  4. Cook the pancakes on a greased griddle or skillet over medium heat. Don’t overcook!

Pumpkin Muffins

If you are looking for a spicy, subtly sweet, vegan muffin, these bad boys are for you!

Pumpkin Muffins (makes 12 large muffins)

  • 2 C flour*
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 T cinnamon
  • 1 T ground ginger
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 2/3 cup maple syrup
  • 1/2 C oil*
  • 2/3 C unsweetened almond milk
  • 1 tbsp vanilla extract
  • 1 1/2 C pumpkin
  • 1/2 C raisins, walnuts, pumpkin seeds, etc. (optional)

*I used 1 cup white, unbleached and unbromated flour and 1 cup whole wheat pastry flour. For the oil, I used refined coconut oil.

  1. Preheat the oven to 350°. Spray a muffin tin with cooking spray or use cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
  3. In a large bowl, combine the maple syrup, oil, almond milk, and vanilla.
  4. Whisk in the flour mixture in 2 batches until just combined.
  5. Fold in the pumpkin.
  6. Stir in your mix-ins, if you have any.
  7. Pour the batter into your muffin tin. Bang the pan on the counter a couple of times to get rid of any air bubbles.
  8. Bake 35 minutes or until a toothpick comes out clean.
